Easy sunflower seed oatmeal cookie recipe
As our sunflower growing project comes to an end, we can harvest our sunflower seeds and use them to grow new plants and to eat.
Let’s use some of the sunflower seeds we have harvested to make a delicious cookie.
You will need:
:: a cup (140g, 4oz) of sunflower seeds
:: 1 cup (225g, 8oz) of room-temperature butter
:: half a cup (125g, 40z) of caster sugar
:: half a cup (125g, 4oz) of soft brown sugar
:: two eggs
:: one teaspoon of vanilla extract
:: 2 cups (225g, 8oz) self-raising flour
:: 1/4 teaspoon (optional) of salt
:: 1 cup (75g, 2oz) flaked coconut
:: 2 cups (170g, 6 oz) oats
:: large bowl, whisk, wooden spoon, baking sheets, baking parchment, tablespoon
Start by dry roasting a cup (140g, 4oz) of sunflower seeds in a frying pan, to get them extra delicious.
Next, in a large bowl, beat together 1 cup (225g, 8oz) of room-temperature butter, half a cup (125g, 40z) of caster sugar, and half a cup (125g, 4oz) of soft brown sugar.
Add in two eggs and one teaspoon of vanilla extract.
Add 2 cups (225g, 8oz) self-raising flour and 1/4 teaspoon (optional) of salt and mix well.
Stir in the roasted sunflower seeds, 1 cup (75g, 2oz) flaked coconut, and 2 cups (170g, 6 oz) oats.
Place heaped tablespoons of the cookie dough onto baking sheets lined with baking parchment.
Bake in the over at Gas mark 4, 350F, 175C for about 10 minutes until golden.
When baked, leave to cool on the baking sheet for a minute or two and then transfer to a cooling rack to cool completely.
You can store the cookies in an air-tight tin for a few days and they are delicious with a glass or milk or cup of tea.
